Simple Grain-Free Granola

25-30 minutes grain-free granola packed with seeds and nuts (sweetened with maple syrup). Plenty of fibre, potassium, healthy fats, calcium, iron, with some carbs and protein.


3 cups rolled jumbo oats

3 tbsp protein powder (I use The Organic Protein Company's unflavoured whey protein)

1 cup almond flakes/chopped almonds

1 cup coursely chopped nuts and seeds(pecans , walnuts, chia seeds, pumpkin seeds, hulled hemp seeds, flaxseed)

half cup and 1 tbsp maple syrup

1 tsp vanilla essence

1 egg white

half cup of melted coconut oil



Preheat oven to 150C and position rack in centre of oven; put oats in a large bowl; in a small saucepan over low heat, warm the oil, vanilla esssence and maple syrup and mix into the oats and protein powder; spread the mixture evenly onto a large baking sheet and bake for 25 minutes or until it starts to brown; keep checking every 10 minutes to ensure its not baking too fast or burning and toss it a few times; then take it out and place on kitchen counter; add egg white to nut and seed mixture and add the nut. seed and egg white mixture to the oats on the tray; place in oven for a few more minutes (you decide how much more toasty you want it_ and when its ready, remove from oven and let it cool on tray; store in an air-tight container and it will keep for a few weeks.

Note: the coconut oil helps the granola crisp up nicely - I use Cocopacific from Amazon as its odourless.

Note: a quarter cup as part of your breakfast is enough (enjoy dry or mix in coconut kefir yoghurt).
